I am so sorry for skipping out on your past week!

Because then it’s just been just one factor soon after a further, involving medical practitioners appointments, father or mother instructor meetings, past minute, special school assemblies and actions, all on best of the ordinary day-to-day to-do’s have had me feeling like I have not been capable to capture my breath!

But . . .

Anyone looks to be feeling improved and, with the finish of school phrase approaching, items seem to be slowly (slowly) settling down, fingers crossed they remain that way at least for a minute or two so I can capture my breath.

Me?! Effectively it looks I have long gone and acquired myself but a further food stuff obsession  . . .

You men, I am so fired up to formally share this salmon and avocado sushi bowl recipe with you simply because I am seriously in really like!

People of you who follow alongside on Fb and Instagram know allllllll about my “Sushi bowl Sunday” custom ( see??  right here,??  right here,?? right here and?? right here) .

It’s just so superior!

It’s everything you really like about a salmon and avocado sushi roll but it’s served in a bowl in its place of as a roll. (obvs)

Light-weight, fluffy garlic and ginger cauliflower rice is piled high with succulent salmon, pickled radish, baby cukes and creamy, dreamy avocado.

Then we incorporate in a few of toasted nori sheets, simply because sushi isn’t sushi without the need of a minor nori,  and then we complete items off with some fresh new chili for a cheeky kick of warmth, a generous sprinkling of sesame seeds for that all essential crunch and a superior drizzle of avocado oil mayo simply because, yum!

So substantially deliciousness and the contrast in texture is really incredible!

Helps make one deliciously very simple, seriously flavorful salmon and avocado sushi bowl.

2 x small (or one significant) cans of salmon , drained

one/2 a small avocado, sliced

2-four Toasted nori sheets

one Tablespoon of pickled radish

one baby cucumber, finely sliced

one small chili, finely sliced

one Tablespoon of sesame seeds

one Tablespoon of avocado oil mayonnaise ( Retail store bought or do-it-yourself – I like to use Sir Kensington’s or Primal Kitchen area )

For the rice –

2 cups of cauliflower, riced ( if you are not able to get pre-riced cauliflower it’s quick to make your individual – just grate up cauliflower possibly utilizing a trusty old box grater or procedure in your food stuff processor for a few of seconds. You could also sub common rice or quinoa if you favor)

one teaspoon of coconut oil (or cooking unwanted fat of choice)

2 cloves of garlic, crushed

one knob of ginger, grated

one Tablespoon of coconut aminos

Salt and pepper to flavor
