Adventures in Raw ‘Cooking’ – Luscious Lemon Cookies

Lately I have been really getting into raw eating, raw recipes and living a more… raw/vegan life in general. I have no moral objections to eating meat, so I still do on occasion, but I prefer not to. I feel ‘lighter’ when I stick to most fruit and vege with some seafood.

Anywho, I downloaded the raw cookbook from Raw Pleasure so I could give a go at making some real raw recipes. Anyone can make a smoothie, but how do you make a meal or dessert with no flour, sugar, artificial sweeteners, etc?

When I saw a recipe for ‘Luscious Lemon Cookies’ I knew I had to try it because The Bloke loves lemon. (Poor guy will probably never get a lemon meringue pie now that I’ve taken a turn for raw…) I finally managed to get all the ingredients yesterday…

Getting Started

…I mainly needed cashews and a couple extra lemons. (Yeah, I have a very small countertop.)

I learned a few things about my various cooking tools…

Nut Grinder

When you’re grinding two cups of cashews, you will find out all the ways your nut grinder sucks. Ack. I got what I paid for (the cheapie) and it works, but when the top is constantly trying to twist off the bottom while you’re grinding?

Well, that was just the beginning.

Lemon Zest

Something to add to my Christmas list? A proper lemon zesting thingy. I gave up with my traditional grater after only getting this much. Bad chef! Bad chef!

Blenderfull

I piled all the ingredients in the blender…

Needs OJ

…and got reminded of how much my blender sucks.

I do love my blender, but it doesn’t always cooperate. It blended the cashes up pretty well (the bottom layer) and then decided to give me the finger. I decided the ingredient just must be too dry, so I added some orange juice.

That didn’t help.

I couldn’t add a heap of orange juice because they needed to be cookies, not a bowl of porridge. Not to mention they are meant to be lemon cookies, not orange ones. (Though that’s a thought…) I tried mixing things around, poking it with a chopstick, doing whatever I could, and it simply wouldn’t work.

My breaking point came when…

Broken Spatula

…*sniff* My spatula broke. Another cheapie, but I loved it.

After that, I said ‘screw this’ and unloaded everything into a mixing bowl. I decided on more agave nectar anyway, so it worked out. Plus, I almost always prefer mixing things by hand. This felt a little funky, but it was fun.

The next part of the recipe was to put the mix into cookie shapes and then dehydrate.

I don’t have a dehydrator.

I could have figured out how to use my oven as such, but it’s been too hot to do those sorts of things, so I had another ‘screw this’ moment and chucked the whole thing into a cakepan. My favvie cakepan because you can ‘unlock’ the ring and leave only the bottom.

Lemon Crust

Ta da! Luscious lemon pie crust. I put it in the freezer for about… four or five hours. During that time, I figured out what to do with it.

After dinner, I took it out of the freezer and found that it was firm but still pliable. I cut out a piece of pie shaped chunk, put it on a plate and topped it with raw fruit.

End Result

Delicious cool fruity treat for a warm night.

Of course, it was less than 100% raw when I topped it with a bit of cream for The Bloke, but it’s still the healthiest dessert we have had… ever.

Looking back…

Thinking back on it, I would have changed a few things:

1. Lime juice instead of orange juice. (I love lemon n’ lime.)
2. Mix it all by hand.
3. Top with more mild fruit like strawberries, bananas, kiwi… It was good, but the citrus of the ‘crust’ needed to be balanced more than it was. (I used mixed fruit that included raspberries and cherries.)

All in all, I think it’s a success.

Next up? Raw chocolate. I’ve already made a couple batches, but I keep forgetting to take pictures. Ack!

A Piece of Advice

A friend emailed me yesterday because she was feeling a little down about things health and weight related. I wrote her a huge email, but I wanted to share a quote with you that surprised me when I read back over it.

Turns out, I’m learning to look on the bright side without realizing it…

Losing weight you have already lost sucks big donkey balls. I’m working on eight pounds that I’ve lost before… twice. Such as life. BUT, look at it from the other side – you’ve lost it once so you can lose it again. It’s not impossible because you’ve already proved it’s possible.

Checking In – Don’t Wanna

cupYou know those days when the last thing you want to do is front up on your blog about your weight?

This is one of those days for me. While I’m not stressing (I’ll explain why), I am a smidge embarrassed about posting up the actual numbers.

BUT, what is the point if I don’t do it?

Yep, the 230s. It’s been a while since I have seen them again, and they’re not a welcome sight to be sure. The last time I stepped on the scale and was only just close to 230, I freaked. This time? Well, the vacation was good for me – especially for my head.

Why I’m not stressing.

I went on vacation for a week. I ate plenty of seafood mornay (mornay is a cheesy creamy sauce), I had smoothies made with ice cream, I had carrot cake, I had Chinese food with the husband and with friends, I drank more alcohol last week than I’ve drank in the past three months…

And I accept that.

I had a frigging fantastic time on vacation, and I don’t regret a moment of it.

Part of the weight is dehydration from the alcohol, which is why I’m boosting my water considerably this week. Pounds will come off as I rehydrate.

Part of the weight was because I ate heaps more calories than I have been since last May. Pounds will come off as I adjust back to lower calorie intake.

I’ve printed off a heap of raw recipes that I am so excited about trying in the coming weeks. Pounds will come off as I eat more nutrient-rich and healthy food.

While it sucks to have to lose pounds that I had already lost, I’m looking at it in a different way: It might take a couple weeks or a couple months, but I have lost this weight before and I can lose it again.

It’s as simple as that.

BMI Bullshit

Have you ever looked at the BMI chart and wondered where they could have gotten it from? Yeah, it makes sense – height and weight – but with so many body types out there, should people be so quick to adhere to what the chart says?

Some people aren’t so sure. And others? Well some others thing the BMI chart is the biggest heap of crap since that scene with the dinosaur poo in Jurassic Park.

One of the latter is the blogger at Shapely Prose. She has put together an absolutely amazing slideshow that will make you think twice before you start talking about how right and perfect the BMI chart is.

And before anyone gets into that here, think about this: Arnold. Ahnold. You know him. Governor of California. Terminator guy. Buff, built, and tall.

According to the BMI chart, he’s obese. (Maybe even morbidly obese, but I can’t remember exactly how tall he is and what he weighs.)

Therein lies the trouble with the BMI chart and with a lot of the other charts out there – there are too many body shapes among us to make a single chart that encompasses everyone. Some work better than others, but the current BMI chart certainly isn’t the chart that ends all charts.

Being a woman who is not only fairly tall but with broad shoulders and a big bone structure (I know you’ve heard that one before, but it’s true), I would probably not look so good at my ‘ideal’ weight according to the BMI chart. I can’t tell you that for certain, but looking around I can tell you it with a lot of confidence.

I’m not against the BMI chart, I’m just against it being the be all and end all of weight judgment.
